Humans are able to detect sweet, bitter, salty, sour, and umami (aka savory) flavors. Most birds are unable to distinguish sweetness because they have different taste receptors. But a recent study found that penguins, which are flightless birds, lack not just sweet-tasting genes, but bitter and umami, as well. Is this tangible evidence of evolution at work?
